This recipe is a guilt free and satisfying Vegan chocolate tasting snack which is high in protein, has no added sugar or fat, contains no dairy or egg and is diabetic friendly.
You will need a food processor to make this treat.
Ingredients
· 2 cups dried and pitted dates
· 2 cups raw or roasted but unsalted nuts( I used Cashews)
· 1/3 cup Chia Seeds
· 1/3 cupBioglan Superfoods Rice Protein powder
· 1/3 CupBioglan Superfoods Cacao Powder
· 1/3 cup water
· Extra Chia Seeds for rolling finished snacks
Method
· Process the nuts in the food processor until coarsely ground, remove from processor.
· Process the dates in the food processor until small sticky pieces remain. This can take a little time.
· Add the coarsely ground nuts back in with the dates, add the chia seeds, cacao and the water and then process until a sticky large ball is formed.
· Pinch off walnut sized pieces and roll with your hands into bite sized balls and then roll in the extra chia seeds to coat and form and outer layer. Makes around 40 snack balls.
· Your Chia Seed Snacks are now ready to enjoy and best stored in the fridge.
